Dear Duke’s Mayonnaise,

I love you so much.

Today I cleaned out my kitchen cabinets.  I threw out a very gross open bottle of chocolate flavored red wine.  I am donating a small bag of canned goods that I bought when I decided I was going to try and get over my disdain for kidney beans.

When I rearranged my stuff in the pantry I realized I had three unopened containers of Duke’s Mayonnaise.  Because when I go down the condiment aisle and I see you there I always think it is better to be safe than sorry.  What if there was an emergency that could only be fixed with egg salad? or a turkey sandwich?  Or the delicious chicken recipe I actually got off of the Hellman’s website? Or what if I decide to make grilled cheese sandwiches for dinner? Did you know that mayo makes the best grilled cheese? Don’t butter your bread, use mayo.  You will never go back to using butter.

You’re a damn fine mayonnaise, Duke’s.  You really are smooth and creamy.  Now, come to Mama.

P-A-R-T-Y or I Love Kale Chips

Yesterday evening I posted a picture of the three, yeah, three bags of kale I selected to receive in our CSA box this week.  My friends and a good portion of the internet has been abuzz about the deliciousness that is the kale chip and I thought I’d give it a shot.

I tagged the picture with a few of my kale loving friends, mostly just to give them a chuckle.  I go big.  Think you might like kale, well then get three bags!

And guys, facebook LOVES kale!!  You guys came out of the woodwork to shout about the glory that is this superfood. I had planned on making them this afternoon when the kids get home from their last day of school.  Last Day of School?  Party down with some KALE, kids!!!

I nurse Lucy to sleep at night in the rocking chair.  In theory I could go put her in bed but the great majority of the time I just let her snooze on me and I goof off on the computer or watch “my stories” (Duck Dynasty, Bravo garbage, yanno important stuff on TV) and take her to bed when I hit the hay at the late hour of around nine.

But last night, this happened.

And with my night all to myself what did I do???  I marched right in to the kitchen and started trimming ribs off kale, yes I did!!!  And if that was not enough fun I massaged them with some olive oil and popped those bad boys in the oven.

When someone says “Taste this, it is just like potato chips!” my instinct is to call Bullshit.   O’Doul’s is not “just like real beer.”  Decaf coffee is not just like the real thing.    The cheap, big bag of Tasteeos is not even “just like” Cheerios.  I mean, come on.  But kale chips???

Come on over to my house!!  I will be serving kale chips.  All summer.  They are delicious. Crispy and light and so good.  Using kitchen scissors I just folded each leaf in half and trimmed up the middle to remove the rib and what we have left was delicious curly q’s of superfood!  I’m hooked.  It is the Weekend of Kale Chips!  I have declared it so.

If you need me any time on Sunday I’d guess I will be in the bathroom.  Kale.  A superfood packed with dietary fiber.  What’s not to love?

Snow & Comfort Food

The snow has melted.  Less than 24 hours later and there is almost no evidence of what may prove to be the only snow fall we see this winter.  But my refrigerator and my stomach still tell the tale.

Em had the day off school yesterday and we had big plans.  We were going to eat.  And stay in our pajamas.  (And watch Judy Moody’s Not Bummer Summer, but I was slightly less excited about that than she was. ) I checked in with MQD mid-morning to see what he’d like for dinner and he responded immediately “Shepherd’s Pie.”  I’ve never made Shepherd’s Pie but as far as I know, there is no way to ruin meat, gravy and mashed potatoes in a casserole dish. 

Early yesterday afternoon it seemed like my dreams might not be realized.  By lunchtime I was out of my pajamas and running to the store for a five pound bag of potatoes.  An hour later I was peeling that bag of potatoes while Lucy slept in her car seat.

While the potatoes boiled Em and I watched some of her movie and I fed the little lady.  I erroneously thought she might get back to sleep.  In case you are wondering, if you are ever preparing to enter a contest that includes the Triple Dog Dare Challenge  “Mash five pounds of potatoes with your right hand while you jiggle an eleven pound baby with your left hand” I’m your girl.

Later that evening MQD says “Dinner looks good, baby” and I suppose I could have been more humble.  “It damn well better, the potatoes alone took me two hours.”

I promise it is not my lack of employment that is making me all cook-y.  It’s the cold weather.  Two winters ago was the Winter of Italian Wedding Soup.  This month marks the start of the Winter of Shepherd’s Pie.  I cheated a bit and used McCormick’s Brown Gravy mix because I forgot to grab Worcestershire at the store.  But it was a smashing success.  I will be eating and then repeating this meal.

Em was Clean Plate Club all the way.

Lest you think I am gonna get all whole foods, hippie dippy on you…. fear not.  We had dessert, too.  A certain little lady turned one month old yesterday.  So a cake was in order.  I’ve seen this recipe before but decided to give it a go.  The Two Ingredient Cake. Pick your poison – One can of soda, one box of cake mix. Mix.  Cook and enjoy.  We opted for Sprite and Strawberry cake.  Cream cheese frosting, of course.

It has that Pop Rocks  “Holy shit what I am eating is totally artificial” flavor and it makes my teeth feel like they are wearing a sweater but damn… it is tasty.

I cooked this entire dinner with a wide awake one month old Lucy bouncing on my shoulder.  Evidently it wore her out.  Because she fell asleep in the middle of her party.

The Pre-Party can sneak up on you, little lady.  Take it from your mother.  She has slept through a few parties in her day.
